- 410 grams unbleached all purpose flour (+ more for work surface)

- 1 oz. unsalted butter (cubed, at room temp)
- 1/2 cup pilsner (cold, style beer, I didn’t have any beer so I added some water)
- 340 grams unsalted butter (cold)
- 2 Tbsp. unbleached all purpose flour
- 60 grams baking soda (baked, see notes)
- 1 egg yolk
- 1 Tbsp. milk
- coarse salt
- flax seeds (optional)
