The first try making these I'm glad I tasted before I cooked them (they tasted awful!) So I tweaked. Once tweaked, they are very good and really do stop pms chocolate cravings, as they are extremely filling (unfortunately though, they only stopped the *chocolate* cravings for me).
Here are my tweaks & recommends:
(T= necessary tweak, R= not necessary, but recommended)
T-Regular organic cane as a substitute for coconut sugar (I even added a little more sugar, to a total of 2/3 cup depending on your own taste).
R-As per my own tastes, I added slightly more cinnamon (a pinch more).
R-Instead of chopping up the chocolate bar, I melted the entire thing and mixed it in. This made the cookies easier to check for doneness, and it was just....easier to do that cut up the chocolate bar. It also makes the cookies less sticky. (for some reason, were REALLY sticky without my melting the chocolate first.)
R-I recommend cooling 20 min. + (minimum) before trying to peal them off the parchment paper, ESPECIALLY if you make the original recipe (as they stuck to the paper)
All that said, once tweaked, these cookies are something I will keep in my arsenal probably for a very long while.
