I realized when tasting it there was no balance to the tartness of the mustard and vinegar so I added some honey. It came out ok and the texture was good I only baked it about 45 minutes and roasted some veggies at the same time.

It is an ok side with rice but not as a main meal.
I had the tofu turn out either too soft or over cooked, being burned.
I may do this again as a side but never as a main dish and would add meat or something to it.
