    These potatoes turned out fantastic! Roasted sweet potatoes are night and day better tasting than prepared in the microwave. There’s caramelization that’s going on that brings out extra sweetness. Plus roasting them in a convection or standard oven gives the potatoes an extra texture inside. Plus the skins practically fall off, leaving more edible potato inside. Or eat the skins too if that’s your thing. This recipe is simple and spot on.
