- 4 Tbsp. olive oil (or vegetable oil, divided)
- 1 Tbsp. soy sauce
- 1 Tbsp. worcestershire sauce
- 3 Tbsp. ketchup
- 1/2 tsp. onion powder
- 1 tsp. Dijon mustard (or yellow mustard)
- 2 Tbsp. brown sugar (packed)
- 4 cloves minced garlic
- 1/2 tsp. kosher salt (or to taste)
- black pepper (to taste, preferably fresh cracked pepper)

Cooking time was off for pork and potatoes combined. 30 min was way too long for my chops and they were about 1/2 inch thick. Came out tough as leather. Potatoes were just about right but would have been crunchy with shorter time. Would try skillet version next time.
