Good! I did add veggies. Note: the meat was done 185° in about 2 hours at 350° in my oven. Keep an eye on it. I just removed the meat and continued cooking the veggies.

This recipe reminded me why roast cooked in the oven reign supreme. Recipe made it to my cookbook collection, reserved for the best.
