- 300 grams carrots (peeled and chopped into small chunks)
- 400 grams potato (white, peeled and diced into cubes)
- 400 grams sweet potato (peeled and chopped into chunks)
- 100 grams frozen peas
- 1 Tbsp. canola oil
- 1 medium onion (peeled and finely chopped)
- 3 garlic cloves (peeled and finely chopped)
- 2 1/2 Tbsp. curry powder
- 1 can chickpeas (400 gm, drained and washed)
- 1 tsp. salt
- 1 1/2 tsp. sugar
- 1 Tbsp. soy sauce
- 10 stalks coriander (finely chopped, optional)
- 8 sheets puff pastry (vegan-friendly, I use Pampas Puff Pastry)
- 4 Tbsp. soy milk
- coconut oil spray
- neutral oil
