- 1/3 cup shallots (chopped)
- 1 inch galangal (knob of fresh, or ginger, peeled and minced or grated)
- 2 cloves garlic (minced)
- 1 Tbsp. Thai red curry paste
- 1 cup arborio rice
- 1/2 cup dry white wine (or sherry)
- 1/2 fresh lime
- 1 scallion (finely chopped)
- 2 Tbsp. chopped cilantro (finely, or 1 tablespoon finely chopped Thai basil)
- kosher salt
- freshly ground black pepper
- 1 lb. large shrimp (thawed, if frozen, peeled and deveined)
- 1 Tbsp. olive oil
- 1/2 fresh lime (juice from)
- 1/2 tsp. curry powder (your favorite; if you're not sure, use a mild yellow)
- 1/2 tsp. sweet paprika
- 1/4 tsp. ground coriander
