Oven Baked Rosemary Parsnip Fries,With a Spicy Mayo Dipping Sauce.

Ok So I’ve been wanting to try these for quit some time now,I’ve heard of other recipes people have made with parsnips, and they all sounded so delicious, so i figured I’d try my hand at Parsnip Fries, like french fries or sweet potato fries, but healthier. They are super easy to make as a weeknight side for a meal, and take no longer then 35 minutes. I came up with a spicy mayo dipping sauce for them as well, which turned out amazing. NOTE: the spicy mayo sauce is super super easy, all it is, is 1/2 tablespoon mayo, with a pinch of cayenne pepper, and cumin. I like mine spicy so i added more cayenne pepper.
Ingredients
- 4 parsnips (large, cleaned really well, & peeled.)
- 1/2 Tbsp. olive oil
- pepper
- dried rosemary (or fresh)
- 1 clove chopped garlic
- 1/2 Tbsp. mayo
- 1 pinch cayenne pepper
- 1 pinch cumin
Directions
- First off wash the parsnips really well, with soapy water, then run under cold water, to get the soap off. Cut the ends of the parsnips off, and peel them.
- Next make sure your working with a sharp knife, hold the parsnip, lengthwise and cut into pieces. like french fries. .
- spread out on olive oiled, baking sheet, and sprinkle with salt & pepper to taste, and rosemary. and 1 clove chopped garlic.
- place in 450 degree oven, for 40 minutes.then let cool, enjoy.
- Serve with spicy mayo dipping sauce..
