- 4 lb. baby back ribs (about 2 kilos of, trimmed of any silverskin, tendon on the rib underside)
- granulated garlic (as needed)
- black pepper (Smoked, or regular black pepper, as needed)
- sea salt (as needed)
- 2 onions (small, sliced thin)
- 2 oranges (large, sliced thin)
- 2 lemons (sliced thin)
- 1 cup hoisin sauce (prepared, preferably organic like Whole Foods 365)
- 3/4 cup orange juice (fresh squeezed)
- 2 large garlic cloves (finely minced or pressed)
- 2 ginger puree (generous teaspoons, 18 grams, the organic jar stuff or finely zested fresh ginger root)
- 1 espresso powder (generous teaspoon, 2 grams, or use 1 tablespoon reduced, really strong coffee)
- 1/2 cup bourbon (spirits –, whiskey, dark rum, or cognac)
- 1/3 cup ketchup (organic)
- 1 tsp. smoked paprika (or regular paprika)
- 1/2 tsp. black pepper (smoked, or regular black pepper)
