My wife said it was the best potato soup she ever had and this is from a lady who usually says things taste “fine”. That being said I modified it a little on the fly - didn’t have dried basil, added much more pepper, some minced garlic and some salt — the recipe isn’t clear but believe you are to completely cook the potatoes and allow them to cool some while you make the soup base - I did concurrently so had to cool the potatoes in the freezer for a bit to keep them from mashing under my knife. Overall we really enjoyed!

This soup is very good. Needs a bit more heat for me, but good overall. Kids would like the potatoes peeled.

Perfect recipe. Was flavorful, hearty and VERY much like the original. The directions didn't give the actual amount of salt, so I used 2tsp and it tasted great!
