- 1 clove garlic
- 1/2 Tbsp. lime juice (fresh-squeezed, plus more as needed)
- 1/2 cup fresh basil (or cilantro, roughly chopped)
- 1/2 cup grapeseed oil (Wildtree Roasted Garlic, or olive oil)
- 1 can black beans (rinsed and drained)
- 10 cherry tomatoes (cut in half)
- 1 cup frozen corn (I love the Trader Joe's Fire-Roasted but you can use any kind)
- 1/2 red onion (chopped)
- 1 red pepper (medium, halved, seeded and finely diced)
- 1 cucumber (small to medium-sized, peeled and diced to make about 1 cup)
- 3 avocados (diced)
- 2 mangoes (diced)

Use a Big bowl when preparing (a lot of product). Needs a night in the fridge to let the flavors meld. Next time I will double the tomatoes

This was delicious!!! Even my meat and potato hubby liked it.
I used Red Quinoa, and I added all of the Optional Add-Ins, except the Mango. But, i do think the mango's sweetness would be yummy.

Loved by kids and adults. 2 mangoes add the perfect amount of sweetness.

This was excellent however I did not add the oil! I felt like it would weigh it down I added the garlic amd lime right to the mixture. I only did one mango and one avocado and it was fine. I did not add corn or red onion because I had none. Otherwise it was a wonderful side dish that was flavorful and light. Would make again with these same modifications!

Great, adaptable and lasts a few days for leftovers. I was a hit with family as well.
