- 1/3 cup rice vinegar
- 2 Tbsp. sugar
- salt (to taste)
- 1/2 japanese cucumber (seedless, hothouse cucumber or 1)
- 1/4 inch ham (thick slice of, 6 to 8 ounces)
- 1 avocado (ripe)
- 2 oz. radish sprouts (aka kaiware or pea shoots)
- 1 cup crabmeat (cooked, shelled, optional)
- 6 pieces sushi nori (each 8 by 7 inches, see note above)
