I loved this dish! I was skeptical that I would like the blue cheese in this, but I loved it! Used kale instead of spinach b/c it’s what I had on hand & boiled it w the orzo. Also, roasted garlic w the squash & then heated it up in the oil to add another layer of flavor. Looking forward to making this again!

I used feta instead of the blue cheese, doubled the garlic, and added salt and pepper. Came out great, one of our favorites! Plus I just add the ingredients to the skillet with the oil and garlic to save having to use so many bowls!

I made this recipe with sweet potato and crumbled goat cheese because blue cheese is a little too much for me. it was delicious and I'm totally obsessed with it. Nothing against butternut squash, I just find sweet potato delicious and easier to work with.
