- 1/3 cup olive oil (reduced from original)
- 1 1/2 cups feta cheese (or whatever amount you like)
- 1 cup red bell pepper (chopped)
- 1 cup yellow bell pepper (chopped, I also tossed in some green)
- 3/4 cup pitted kalamata olives
- 4 green onions (chopped)
- 2 Tbsp. capers (drained, I left these out because I can't stand capers)
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. white wine vinegar
- 1 Tbsp. minced garlic
- 1 1/2 tsp. dried oregano
- 1 tsp. Dijon mustard
- 1 tsp. ground cumin
- 3 Tbsp. pine nuts (toasted, completely optional)
