  • 6 stalks scallions (sliced)
  • 3 bell pepper (medium, green, yellow & red, diced)
  • 2 carrots (diced)
  • 1 bunch celery (trimmed & chopped)
  • 1 cup fresh mushrooms (or canned, thickly sliced)
  • 14.5 ounces diced tomatoes (fresh or canned)
  • 2 pounds cabbage (roughly chopped)
  • 8 cups water
  • 4 cups tomato juice (unsweetened, or vegetable juice)
  • 2 cubes beef (/chicken bouillon, or 1 package Lipton soup mix)
  • onion powder (or any ground herb or spice, to taste)
  • ground black pepper
  • salt

    I love cabbage soup and I have been making it long before there was a cabbage soup detox/diet craze. The thing with this soup is when you aren't doing the diet thing, you can add and subtract vegetables to your liking. I start with the main ingredient, cabbage, and then add some base ingredients, chopped sweet onions, bell peppers, and celery and I go from there, depending on what I have on hand and what I have a taste for. Choice additions can be carrots, turnips, tomatoes, green beans, spinach, kale, mushrooms, quinoa, barley, red, white or black beans. You get the idea. The soup broth also depends on taste. Sometimes it is tomato juice with either beef or chicken broth and sometimes I leave out the tomato juice and use only broth. For times when I want meat, I will add slices of low fat Kielbasa sausage or some other smoked sausage.

    I have used this many times, maybe time to try it again for the cooler days and nights.. I almost forgot about it..
