They didn’t come out like the ones in your picture, but, I did miss one step. I didn’t simmer for 30 minutes - I only did the three simmer and wash. Oh! I also cut them into strips before I started the boiling. This caused the strip to break and I didn’t get the nice long pieces you showed. Otherwise they did come out really delicious! On the crunchy side, but really good. Today I’m following the directions (by the book) and I’ll follow up with an update

This recipe delivers. Simple, time consuming, and worth the effort. I used grapefruit, a great result.

Turned out well/ important to blanch the citrus several times depending on which fruit you are using.

In general it worked great. I didnt leave tye peels to rest in the sugar solution foe the full 30 min after 10 min there was a crust of surgery forming and the whole pan was starting to solidify. Maybe my kitchen is colder than the receipe assumes. I was able to pull them out before it was one big rock and they taist great.

Really good I used natural organic sugar substitutes though; I Used a mixture of organic maple, organic blue agave, and organic local raw honey. I don't think I used the right saucepan though :/ I think there was a reaction between the oil excreted from the orange peel & the metal of the pot... oh well.

The end result is very nice, however, I feel bad that all of the orange peel juices and orange caramel are wasted. It is also very time consuming.
