  • 1 pound butternut squash (peeled, cut into 1-inch pieces)
  • 1/2 pound turnips (peeled, cut into 1-inch pieces)
  • 1/2 pound rutabagas (peeled, cut into 1-inch pieces)
  • 1/2 pound carrots (peeled, cut into 1-inch pieces)
  • 1/2 pound parsnips (peeled, cut into 1-inch pieces)
  • 1/4 cup olive oil
  • 2 teaspoons orange zest
  • 2 tablespoons orange juice
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh oregano (or 1 teaspoon dried)
