- 1 cup orange juice
- 1 Tbsp. rosemary (fresh minced)
- 1 tsp. Spice Islands® Minced Garlic
- 1/4 cup pitted kalamata olives (chopped)
- 1 lb. boneless chicken skinless thigh (visible fat removed)
- salt
- 1/2 cup onions (chopped)
- 1/2 tsp. sea salt (Spice Islands Fine Grind Sea Salt)
- 1/4 tsp. black pepper (Spice Islands Fine Grind Black Pepper)
- 4 cups chopped kale

Directions
- Whisk together oil, orange juice, rosemary and garlic in a mixing bowl. Pour 1/4 cup of the marinade into a small bowl and set aside.
- Add olives to the mixing bowl and stir to combine.
- Cut chicken thighs into quarters, season with salt and pepper to taste then combine with olive vinaigrette.
