  • 3 tablespoons Mazola Corn Oil
  • 1 cup orange juice
  • 1 tablespoon rosemary (fresh minced)
  • 1 teaspoon Spice Islands® Minced Garlic
  • 1/4 cup pitted kalamata olives (chopped)
  • 1 pound boneless chicken skinless thigh (visible fat removed)
  • salt
  • 1/2 cup onions (chopped)
  • 1/2 teaspoon sea salt (Spice Islands Fine Grind Sea Salt)
  • 1/4 teaspoon black pepper (Spice Islands Fine Grind Black Pepper)
  • 4 cups chopped kale

    Directions

    1. Whisk together oil, orange juice, rosemary and garlic in a mixing bowl. Pour 1/4 cup of the marinade into a small bowl and set aside.
    2. Add olives to the mixing bowl and stir to combine.
    3. Cut chicken thighs into quarters, season with salt and pepper to taste then combine with olive vinaigrette.

    This was a very good recipe! The flavors were well balanced and the entire dinner was easy enough to prepare. I covered the chicken as it was cooking, ( not mentioned in the recipe). and the next time I will brown the chicken on its own and not with the vinaigrette. The chicken was cooked via the original recipe but not browned as I would like it. all in all 8/10. I'll make it again for sure. thanks
