  • 1/2 cup granulated sugar
  • 2 oranges (zested and juiced)
  • 3/4 cup butter (chopped, chilled)

    Directions

    1. Whisk egg yolks, sugar and orange zest over a double boiler until thick and pale. Add orange juice. Whisk in butter, 1 piece at a time, until mixture thickens enough to coat the back of a wooden spoon. Let cool then chill.
