- 1 cup carrots (grated, about 2 medium carrots)
- 1/2 cup flaked coconut (I omitted this)
- 1/2 cup chopped pecans (toasted, I used walnuts)
- 4 oz. cream cheese (softened)
- 2 oz. unsalted butter (softened)
- 1 tsp. vanilla extract
- 2 1/2 cups powdered sugar
