    One of the best and easiest cakes I’ve ever made. Delicious flavor and borderline foolproof to overbake. The key tho is that you DO NOT USE COARSE CORNMEAL! It comes out too gritty with coarse polenta, but it is perfect with regular cornmeal. Gets a gorgeously chewy crust on the outside that’s almost like a honey candy. So good!!!
