- 1 Tbsp. olive oil (for brushing onions)
- 1 tsp. fresh rosemary (finely minced, or use 1/2 tsp. dried rosemary, finely chopped with large knife)
- 2 Tbsp. fresh thyme leaves (minced, or use 1 T dried thyme)
- 6 Tbsp. mayonnaise (I used 4 T light mayo and 2 T full-fat mayo)
- 1 Tbsp. lemon juice (fresh squeezed)
- 1/2 tsp. Dijon mustard
- 1 cup cheese (lowfat pizza, any mild white cheese will work, but use low-fat cheese for the South Beach diet)
- 3 Tbsp. Pecorino Romano cheese (grated, or use grated parmesan)
- ground black pepper (fresh, to taste)
