This was SO flavorful, tender and juicy. I had some mushrooms, 1/2 head of cauliflower, and a few Brussels sprouts that all needed to be used. I wasn't sure how to make cauliflower rice so I just shredded it in my food processor and added it along with halved Brussels sprouts to the mushrooms and it all went into the oven with the chicken. I will definitely make this again - such a great way to use up veggies!
