- 1 Tbsp. vegetable oil (neutral, such as grapeseed or refined avocado or coconut oil*)
- 1 white onions (or large or two small yellow, halved and thinly sliced)
- 2 cloves garlic (minced)
- 1 cup brown basmati rice (or white, or long-grain white or brown rice, soaked in cold water, rinsed, and drained before adding)
- 2 tsp. turmeric
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 3/4 tsp. salt (plus extra to taste)
- 1 bay leaf
- 2 1/4 cups water (divided, plus extra as needed)
- 5 oz. baby spinach (or chopped, fresh spinach, about 5 cups)
- 1 1/2 cups kidney beans (cooked, or 1 can, drained and rinsed)
- 1 Tbsp. lime juice (each freshly squeezed, and lemon juice, or 2 tablespoons of either)
- freshly ground black pepper (to taste)
- 1/4 cup chopped fresh cilantro (tightly packed, optional)
- 1/4 cup onion tops (finely chopped green, optional)
- sauce (optional, for drizzling on top)
