- 2 Tbsp. mirin (or dry sherry)
- 1/2 cup water (plus more as needed to thin out sauce)
- 1 boneless skinless chicken breast (medium, cut into cubes)

- 2 garlic cloves (minced)
- 1/2 tsp. minced ginger (or grated)
- 1/2 cup red bell peppers (chopped)

- 1 cup long grain rice (uncooked, I used Jasmine*)
- 2 1/2 cups low sodium chicken broth
- 1 cup broccoli florets
- 1/2 cup frozen shelled edamame beans (thawed)
- sesame seeds (for garnish, optional)
- green onions (Chopped, for garnish, optional)
