- 1 1/2 lb. chicken breast (cooked + shredded)
- 2 roasted red peppers (large, diced)
- 6 cherry peppers (de-seeded + diced, I used DeLallo Tri-Color Pepperazzi peppers, found in the Italian section of my local grocery store)
- 28 oz. crushed tomatoes
- 4 cups chicken (or vegetable broth)
- 2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 lb. rigatoni (or other short pasta)
- 1 cup Parmesan cheese (plus extra for serving)
- 1/4 cup heavy cream
- 2 tsp. fresh basil (plus extra for serving)
- crushed red pepper flakes (optional, for serving)
