Absolutely loved this dish! So simple and so delicious. Leftovers were great for lunch the next day too. I did not use oil to sauté the veggies, I typically just use a small amount of water and it works very well.

This was a huge hit with everyone in my family the first time I made it ( this NEVER happens). Second time I pushed the limits and added mushrooms and 1/2 cup of red lentils. This time child 2 balked (maybe the lentils?). Note to self - both kids flick out tomato chunks, so purée any tomato chunks or just use a jar of pasta sauce. I will be making this often!

So so good. A staple for us now. We add more tomato chunks and paste but we like thicker pasta.

I added a bit more seasonings and vegan meatballs from gardenia. Was delicious and my lil ones loved it
