This was fantastic!! I was a bit uncertain, thought the shrimp would be overdone, but I made this just as written and they were tender and perfectly cooked. This dish is rich and sooo flavorful! I’d intended on serving it over zucchini noodles but ended up using some carrot noodles I had on hand. Wow! The sweetness of the carrots was perfect with this. Even my burly meat and potatoes man couldn’t get enough!
