  • 1 pound smoked sausage (cut into bite sized slices)
  • 1/2 onion (medium, diced)
  • 2 cloves garlic (minced)
  • 1 cup sliced mushrooms
  • 3 cups penne pasta (uncooked)

  • 10 ounces roasted red peppers (undrained)
  • 2 cups monterey jack cheese
  • 1/2 cup Parmesan cheese

    It'll take about twice as long to cook the pasta as it says in the recipe, but other than that, it's real good. If you decide to use mozzarella instead of Monterey Jack, use a little less, unless you like a very gooey pasta.

    Came out great! Followed recipe exactly as written. Used turkey sausage and just added salt, pepper and some crushed red peppers. Will make again.

    This recipe was easy and delicious! I used turkey smoked sausage because I had a coupon but otherwise followed it exactly and I really liked it, yummy!

    Made this for dinner tonight. Added some Cajun seasoning and a little heavy cream at the end. Served with some garlic bread.....absolutely delicious! My Hubby said it’s a keeper

    We really enjoyed this. Used fresh red pepper. Had to use more chicken stock to get pasta al dente. Would definitely make again.

    Turned out great,will do it again. Couldn’t find smoked sausage, used spicy Italian sausage as a placement. Cooked it first and drained the fat.
    Really enjoyed this dish, I would cook the mushrooms and smoked sausage separately for a little while first just to crisp them a little before putting in with all the other ingredients. I also just used mozzarella on its own as I couldn't find Montgomery jacks. Do NOT do this! ridiculously gluey and almost impossible to serve!

    Too liquid-y, had to boil for longer to try to get rid of water, would recommend not as much water. Otherwise delicious!
