- 1 onion (small, halved and thinly sliced)
- 1 lb. broccoli (crowns, cut into large florets, about 2 cups)
- 1 1/2 lb. asparagus (ends snapped off and cut into 2-inch pieces)
- 4 oz. baby bella mushrooms (or slice white, about 1 cup)
- 4 cloves garlic (minced)
- 1/4 tsp. crushed red pepper flakes (more or less, to taste)
- 1 tsp. sea salt
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. olive oil
- 3/4 cup frozen peas
- 1/2 cup fresh basil (chopped)
- 1/4 cup heavy whipping cream
- 1/4 cup grated Parmesan cheese
- 1 lemon
- fresh ground black pepper (to taste)
- sun-dried tomatoes in oil (drained, about ½ cup)
- 2 Tbsp. oil (about from the sun-dried tomatoes, for drizzling)

I thought I had peas but I didn't. So I subbed edamame in its place. Also I made some sautéed shrimp first and then cooked my onions in the oil and I had also added a tbsp of butter to cook them in. I feel like the veggies needed a little sauté first before immersing them in broth. Little tweaks but still a tasty and reasonable healthy meal. Also I aim to have leftovers with just two of us. I definitely have a few more meals!
