- 2 Tbsp. sesame oil
- 2 eggs
- 1 diced chicken breast
- 1/4 cup shallots
- 3/4 cup sauce (pad thai, we used 1/8 cup each of fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and sriracha)
- 1 cup beansprouts
- 1/2 cup peanuts (crushed)
- 1/4 cup green onions

I actually think this was really good the second time I made it because I ended up doubling everything in the sauce except the Sriracha. Turned out great!

The sauce was way too acidic. The vinegar was so strong. I ended up having to add a bunch of peanut butter to it to mellow it out.
