- 1 onion (large, I used a red onion, but a plain yellow is fine, sliced thinly)
- 1 pinch kosher salt
- 1 tsp. balsamic vinegar
- 2 yams (large)
- 1 can coconut milk (full fat yo!)
- 1 Tbsp. olive oil
- 1 cup French lentils (green, rinsed & picked through, black russian lentils would work well too)
- 1 cup brown basmati rice (any long grain rice would be fine)
- 2 bay leaves
- 1 cinnamon stick
- 1 Tbsp. curry paste (or powder)
- 1 tsp. aleppo pepper (or 1/2 t cayenne pepper)
- 1 tsp. ground cumin
- 4 1/2 cups vegetable stock
