- 2 Tbsp. olive oil

- 3/4 tsp. canela
- 1/2 tsp. coriander
- 1/4 tsp. cayenne pepper (or more to your liking)
- 1/2 tsp. pepper
- 1/2 tsp. salt
- 1 onion (thinly sliced)
- 1 tsp. fresh ginger (grated)
- 2 cloves garlic (minced or grated)
- 1 red pepper (chopped)
- 3 carrots (chopped)
- 3 Tbsp. tomato paste
- 1 chipotle chile (pepper in adobo, minced)
- 2 cups chicken broth (or veggie broth)
- 2 cups chickpeas (cooked, rinsed and drained if using canned)
- 1 lemon zest (+ juice)
- 1/4 cup fresh cilantro (plus more for serving)

- 1/4 cup pistachios (chopped)
- 6 medjool dates (sliced, optional)
- 4 oz. goat cheese (2-, crumbled)

I loved this, as did my husband. I'll definitely make it again. I use marinated chicken thighs and an Anaheim pepper. Delicious!
