- 2 Tbsp. tomato paste
- 1 Tbsp. apple cider vinegar
- 500 mL vegetable stock ([0.9 pint / US 2 cups])
- 100 mL water ([3.5 ounces / US 1/2 cup])
- 2 tsp. ground cumin
- 1 tsp. smoked paprika
- 1 tsp. oregano
- 1 pinch canela
- 200 grams corn ([7 oz])
- 400 grams red kidney beans ([14 oz])
- 75 grams mature cheddar cheese (grated, [2.65 oz])
- 1 handful chopped coriander (freshly, + some more to serve)
