  • 1/2 red onion (julienned or finely diced)
  • 3 plum tomatoes
  • 1 cup sweet corn (frozen or fresh)
  • 2 cups baby spinach (fresh)
  • 2 cups quinoa
  • 3 chillies (Thai, optional)
  • 2 teaspoons red pepper flakes
  • 3 cloves garlic (finely grated)
  • 5 saffron (strands)
  • 1 cup tomato sauce (canned and unsalted)
  • 2 teaspoons cumin powder
  • 5 pieces sun dried tomatoes (optional)
  • 3 teaspoons flax seed meal
  • 3 teaspoons kosher salt
  • 1 teaspoon freshly ground pepper
  • 3 teaspoons dried basil
  • 3 teaspoons dried oregano
  • 2 teaspoons cumin powder
  • 5 cloves
  • 4 cups water (or enough water to make sure all the ingredients are floating. Normally, it is good to have the pan half full with water.)
  • 1/2 cup unsalted pistachios (shells removed, for garnish, optional)

    Way too much salt!! I’m not sure if the amount is correct. It made a lot of food and I had to throw it out it was so salty. If I make it again I will use little to no salt
