  • 1 1/2 pounds skinless boneless chicken breasts (cut into bite-sized cubes)
  • 2 tablespoons curry powder (use yellow curry powder for milder or red for spicier)
  • 3 cloves garlic (finely minced)
  • 1 white onion (cut into strips)
  • 1 can coconut milk (lite or regular)
  • 1 red bell pepper (seeded, stemmed and cut into strips)
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 1/2 tablespoons coconut palm sugar (or honey)

    I shared this with my boyfriend, and he cooked it for us tonight. I added red curry paste. The coconut milk did separate when boiled, so it wasn'tas creamy as I'd hoped. Otherwise it was yummy (I added an extra dash of salt to my plate)

    Fairly good, I wasn't able to find a curry paste (used a red curry powder instead) it was still nice, but lacked some complexity. Adding salt did help! Very easy to cook though, I'll definately make it again (with paste this time!!)

    We loved this! We didn't have bell pepper so I subbed in broccoli. We have two little ones so spicy isn't our thing during this stage of life (unfortunately). This was definitely a mild curry but delicious none the less! Our two-year-old ate his entire plate then finished his big sister's! Hubby and I loved it, as well. Very easy to prepare so great for busy weeknights.

    Fairly easy to prepare, but I found it a bit disappointing. Would like it to be spicier and it turned out much saucier than the photo suggests. I wouldn’t NOT make it, but am unlikely to return to it.

    Quick, easy weeknight dinner. I omitted the bell pepper, and used green curry paste instead of curry powder. YUM.

    I omitted the peppers, and turmeric, because I thought I had them, but didn’t. I did add frozen peas in close the end of the chicken cooking. Super good. I paired the chicken with coconut rice:

    This was easy to make...was good but found the flavour was mild. I also added fresh ginger and extra bell peppers. I added sirachha after serving cuz it needed a kick....but overall was tasty😀

    I used just normal Mccormick curry powder and it definitely turned out well, but next time i’d use a different curry powder or curry paste for a stronger/better flavor. still delicious and easy though!

    Very good! I added a tablespoon of butter, and used a bit of orange juice instead of sugar or honey to sweeten and add a hint of citrus. Yum and the kids ate it up!

    this was delicious. i put it in a crock pot on low for 5hrs and came home to a wonderful dinner. i waited till right before i served to add the coconut milk and served other buckwheat. will make again

    Pretty good and super filling. I used thighs instead of breasts and I added an extra tbs curry powder, some broccoli, green beans, and mushrooms. Would make again. I was surprised considering my 2 year old even had 2 bowls!
