- 2 Tbsp. curry powder (use yellow curry powder for milder or red for spicier)
- 3 cloves garlic (finely minced)
- 1 white onion (cut into strips)
- 1 can coconut milk (lite or regular)
- 1 red bell pepper (seeded, stemmed and cut into strips)
- 1/2 tsp. salt
- 2 Tbsp. olive oil
- 1 tsp. ground turmeric

Super easy - I just used 1 package of chicken breasts from Costco - made it for my hubby, Keith. If it were for me, I'd add in cayenne pepper!

Delicious. Nice flavor, just put the amount of curry in that you like. I used a sweet curry and we loved the creaminess of this dish. Will definitely make again.

I added an 8 oz can of tomato sauce, diced grape tomatoes, edamame, and 1 tsp ginger before simmering. Garnished with green onions and cilantro. Yummy!

WOW 🤩 I spiced it up with everything I would’ve put in my Jamaican version of 🍛 curry, the coconut milk was a plus, that was an excellent curry you just have to spice it up yourself!!!!!👍🏾 👍🏾

Very bland. Needs more salt and pepper at the least. I used low fat coconut milk. I would use regular next time in hopes of a thicker sauce.

Delicious but I added five spices spice to the uncooked chicken. Very tasty and would make again. The curry was not overpowering. I used a sweeter curry.

It was pretty good but for some reason I was expecting more. I added some red pepper flakes and it gave it a little kick.

Great recipe! Marinated chicken for 3 hour. Added shrimp and a bit of ginger. Also, waited until the end to include red and green pepper. Delicious 😋!

Really filling easy to make meal my only change next time is to add the red pepper at a later stage as I prefer it less mushy

i used a thai curry mix and coconut water (not coconut milk) and it turned out amazing!!

I added salt and pepper to the chicken while it was browning a bit. Also added small diced carrots. You can also add potato and broccoli to change it up. I served baby spinach with tamari ginger dressing, and brown jasmine rice. Even pickiest daughter liked it!

Pretty good, but like the comments below, needed a little more flavor. Added xtra garlic and cracked the chili peppers open to spice it up. Also added extra cilantro and it came out pretty god

Although it was a quick curry to make and tasted good, i found it to be of a watery consistency type of curry, wasnt so much as a thick curry as i was expecting. i made some coconut rice and popadoms to go with this.

This was pretty good. It needed some more salt after adding the coconut milk to bump up the flavor, but it was pretty good still. I also made a sweet coconut rice to serve with it.

Really nice, easy to make curry. I didnt need to buy anything outside of what i have in my pantry to make it which i appreciate in a dish. I added half a can of like coconut cream to make it creamier and added the rest to my rice (with a little sugar and salt) to make coconut rice
