  • 2 tablespoons olive oil
  • 4 slices bacon (diced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 1/2 cup white wine
  • 12 ounces short pasta (such as shells, corkscrew, or penne)
  • 24 ounces evaporated milk
  • 14 ounces mushroom soup (can creamy)
  • 1/2 cup water
  • 2 cups baby spinach leaves
  • shaved Parmesan (to serve)

    Directions

    1. In a large saucepan, heat oil on medium. Sauté bacon, onion, and garlic 2–3 minutes, until bacon is crisp.
    2. Stir in wine and cook 1–2 minutes, until reduced slightly. Add pasta, stirring to coat.
    3. Mix in milk, soup and water. Bring to simmer and season to taste. Reduce heat to low. Simmer, covered, 8–10 minutes, stirring often.
    4. Remove from heat. Set aside, covered, 5 minutes. Stir in spinach and top with Parmesan to serve.
