- 1 Tbsp. chili powder
- 2 tsp. smoked paprika
- 1/2 tsp. ground cumin
- 14 oz. fire roasted tomatoes
- 2 1/2 cups beef stock (low-sodium, or water! any liquid, really)
- 8 oz. elbow noodles (I like whole wheat ones!)
- 6 oz. white cheddar cheese (freshly grated)
- 3 green onions (thinly sliced)
