- 1 yellow bell pepper (diced)
- 2 tsp. minced garlic
- 10 oz. diced tomatoes with green chilies (mild, do not drain)
- 15 oz. black beans (drained and rinsed)
- 2 Tbsp. fajita seasoning mix (McCormick Organics, from 1 ounce package)
- 5 1/2 cups low sodium chicken broth
- 3/4 cup white rice (uncooked)
- 2 cups rotisserie chicken (cooked, shredded, I found already shredded in the deli section of my grocery store)

- 3 Tbsp. chopped fresh cilantro
- 2 Tbsp. lime juice (juice from about 1 lime)
