Nice spin on Mexican! DEFINITELY use a pot instead of the skillet--the sauce won't fit and you'll make a mess. I used 2 packets of taco seasoning (for the 2 cups of sauce).

Wasnt a fan of the orzo, tried with rice it was better next time im trying with regular padt.

This is delicious! Very spicy! I did make the following modifications: 1) instead of salt & pepper I used a bit of taco seasoning; 2) I added some cream cheese in with the cheddar just to try to cool it down some because it was so spicy (I loved it spicy though just was thinking of others I was feeding); served it with a bit more cheddar, avocado and sour cream. I ate it in a bowl, my husband put it in a tortilla and said it was really tasty.
