- 1 sprig fresh thyme (or 1 teaspoon dried thyme)
- 2 garlic clove (minced)
- 2 bay leaves (small)
- 2 cups long grain rice (uncooked)
- 13.5 oz. coconut milk (can, 1¾ cups)
- 15.5 oz. red kidney beans (rinsed and drained)
- 1 tsp. ground white pepper (white)
- 2 tsp. spice (creole, or Jerk seasoning)

- 2 1/4 cups chicken broth (or water, If using 6 chicken thighs use 2 cups water)
- 1 tsp. chicken bouillon (optional)
- 1 whole Scotch Bonnet pepper (optional)
- 1 tsp. paprika (optional)

Great flavor! I’ve made it several times now and each time I mostly stick to the recipe. Sometimes I add a little more of the seasonings for extra spice or flavor.

great!!!! even my fussy son liked it.
I did not add the bonnet pepper this time for that reason. A keeper.
