- 1 onion (small, diced)
- 2 cloves garlic (crushed)
- 1 sweet potato (500-800 gm washed cut into 5 cm chunks unpeeled)
- 2 Tbsp. ground cumin
- 1 Tbsp. ground coriander
- 1/2 tsp. ground black pepper
- 1/2 tsp. cardamom seeds (optional)
- 1 1/2 cups water (325 ml / 2fl oz, or stock)
- 1/2 cup warm water (125 ml)
- 3 Tbsp. crunchy peanut butter (60gm/ 2.10oz)
- 10 grams frozen spinach (squares, 1.4oz)
- 3 Tbsp. tamarind paste (or lemon juice if you can't find tamarind)
- 25 grams fried shallots (for garnish, optional)
