- 1 tsp. cumin (whole)
- 1 tsp. black pepper
- 17 oz. diced tomatoes (jar/can fire-roasted)

- 1 red pepper (chopped roughly, ~ 1 cup)
- 6 collard leaves (large, stems removed and chopped roughly, ~3 cups packed)
- 1 medium zucchini (sliced thinly, Chinese eggplant also works well)

- 1 tsp. sea salt (Celtic, + more to taste)
