Made with quinoa and it was delicious. Flavorful and kept well in the fridge as meal prepped lunches. Saving this recipe to make again!

Very tasty! This is now going to be part of our regular rotation! Omitted the carrots and used asparagus instead of green beans. Delicious! Also, the calorie content is around 430 for us (calculated through My Fitness Pal).
