This was delicious! I tweaked a few things such as adding in my own blend of seasonings and replaced the courgette with carrots. Served it over quinoa. My boyfriend and I really enjoyed it.

Must say it was so yummy the only thing was I added some mix dried herbs. Will make again ❤️ Pity we can’t add photos.
