- 2 Tbsp. all natural reduced sodium chicken broth
- 1 sweet onion (medium, sliced)
- 8 oz. mushrooms (sliced, any variety)
- 4 carrots (peeled, trimmed and sliced)
- 1 lb. string beans (trimmed and sliced into 1/3’s)

This was really good! We didn’t have carrots so I chopped up some celery in its place. We cut up a whole chicken from HEB the day before so we used the chicken breast from that it was a pretty big chicken so I essentially had to double the recipe. I gave it 4 starts instead of 5 because there were a couple things in the directions that went against cooking best practices. 1) it says to add all the veggies at once. Don’t do this! Mushrooms cook much faster than carrots (celery in my case) and onions. Instead, add the root veggies first and let those sauté down until soft and then add the mushrooms. 2) it says to only let the glaze cook for a couple minutes and then add everything else. However, it takes more than a couple of minutes to make glaze. Let it reduce down for 5-10 minutes at a simmer (stirring occasionally) until it thickens to your desired consistency. This took about 15 minutes for me since I doubled it. It will bubble up a lot when it’s almost done.
Other than that, it was a great recipe and I will definitely make this again!
