- 1/2 cup chopped bell peppers (2 large or 6-7 mini sweet bell peppers)
- 9 oz. smoked sausage (I use turkey or chicken, not ground sausage)
- 6 Tbsp. olive oil
- 1/4 tsp. red pepper flakes (optional)

Good way to use up veggies. Nice change from making sausage and peppers on the stove.. definitely will make again.

Everybody loved the one pan meal.
The red and yellow peppers we used gave a great aroma and taste to the whole pan.

Love this as no other side dishes required. I use a more healthful sweet potato in place white potato. Awesome!

really yummy!! i keft out the green beans and added cauliflower, mushrooms, and red onions. used truffle oil in place of olive oil. lots of prep work but easy cooking. definitely a make again!

It was delicious! Super easy, and guilt free as well. I think I cooked mine about 5min too long, so Ill keep that in mind next time.

I enjoyed it! I used deer sausage so next time I will wait until the last 15 minutes to add. It got too tough. My dog enjoyed the sausage. : ) The veges were spot on. I used squash, onions, mushrooms, carrots, and orange bell pepper. And made too much rice so now Hubby is interested in Rice Pudding.

So yummy!! The sausage is a nice twist to a regular veggie fry with chicken. But sometimes I add chicken and other veggies too. Overall this is great!

Easy, delicious meal! We make it almost every week. Make sure you don’t skimp on those spices though.

Flavors are great! Used 4 T of oil instead of 6, could use even less. consider cutting in half for small sheet! cut up onion as well, really easy to customize. served over garlic cauliflower rice. Really filling too, full of fiber, will definitely make again

This is officially one of my go-to dinner recipes. It's great as-is and accommodates veggie substitutions really well. I highly recommend it!

It turned out GREAT! I used broccoli and Brussel Sprouts instead of green beans, and also threw in red, yellow, and orange peppers, Kielbasa Sausage, Red potatoes, onions, and mushrooms. I chopped my potatoes and boiled them for approximately 5 minutes prior to mixing with additional vegetables before putting in the oven. I added salt, pepper, smoked paprika chipotle Seasoning, garlic powder, onion powder, lemon pepper, and parsley flakes. Opened oven 5 minutes prior to finishing and added grated Parmesan. My husband loved it so much that he said...”If we had this once a week, it wouldn’t hurt my feelings any!” What more can a wife ask for⁉️⁉️⁉️Great Recipe! Thanks!

It is the middle of winter and we are in our camper. Instead of using our gas supply, I put everything in an electric skillet. I like the roasted veggies better- but it still cooked up great. Love this recipe. Substituted use potatoes but put some navy beans and cauliflower instead for less carbs. YUM!

This was excellent! The potatoes need a bit longer to cook. So I recommend either leaving them out or putting them in for a bit before so they are done with the rest. Also, if you are using pork sausage (as opposed to turkey) then cook the sausages for a few minutes before so you can cut them and they won't crumble. The seasoning was amazing and you can add any veggies you'd like. I added onions and brussel sprouts, and some balsamic, and will make again for sure!

Excellent meal! The only time consuming thing was chopping veggies. I used local beef sausage, added baby carrots cut in half, subbed Cayenne pepper in lieu of chili pepper flakes, & used avecado oil instead of olive.

Delicious and easy. I love roasted veggies, and as long as you use a good sausage you know you like, you can't go wrong with this recipe
