  • 3/4 cup bell peppers (assorted sweet, I use about 8-10 miniature bell peppers)
  • 1/2 cup green beans
  • 2 heads broccoli (~3 and 1/2 cups)
  • 5 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1/2 teaspoon onion powder (EACH, garlic powder, ground cumin)
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 3/4 cup shredded cheese (finely, colby jack, Mexican blend, cheddar, pepperjack)

    A healthy meal, fast and easy to make. I'm full of food and satisfaction right now! I liked the cheese but you can skip it. The dairy free option still tastes good.
