- 1 cup brown rice (uncooked, see note)
- 2 1/2 cups broth (veggie, low sodium if needed)
- 1 1/4 cups plain yogurt (dairy free, I use Silk brand almond milk yogurt)
- 1/2 cup salsa (Harissa, see note)
- 1/2 cup red onion (chopped)
- 1/2 cup sweet peppers (chopped tri color, or just red or yellow pepeprs)
- 1/4 cup chopped cilantro
- 2 Tbsp. lemon juice (plus optional thin lemon slices for garnish)
- 1 tsp. salt (adjust depending on sodium in broth)
- 1 1/2 cups chickpeas (cooked, rinsed and drained, about one 15 ounce can)
- 1/2 cup cauliflower (roughly chopped)
- 1/2 cup carrots (roughly chopped)
- 1/2 cup fennel (roughly chopped)
- 1/2 cup zucchini (roughly chopped)
